I just found out that Corey & Courtney Martin had their baby girl on May 21st.  That’s all I know at this point, but as soon as I get the details I’ll let you know.

Granny - we think of you every day. So many things that occur each day bring to mind fond memories of you. The weather was warm yesterday and I know that you would have been sitting on your porch enjoying the sunshine(with a light-weight jacket on, of course!)

Paula and Wynn “thanks” does not say enough for all the work that both of you have done to get this set up for us.

Paula’s Recipe of the Month
May 08: Brown Sugar Meatloaf

INGREDIENTS

* 1/2 cup packed brown sugar
* 1/2 cup ketchup
* 1 1/2 pounds lean ground beef
* 3/4 cup milk
* 2 eggs
* 1 1/2 teaspoons salt
* 1/4 teaspoon ground black pepper
* 1 small onion, chopped or 2 TBSP dried, minced onions (I much prefer the dried, minced onions for this recipe)
* 1/4 teaspoon ground ginger
* 3/4 cup finely crushed saltine cracker crumbs

DIRECTIONS

1. Preheat oven to 350 degrees. Lightly grease a 5×9 inch loaf pan.
2. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.  (Paula’s tip:  I like to mix the brown sugar and the ketchup together, and spread half in the bottom of the pan and save the other half to spread on top.)
3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
4. Bake in preheated oven for 1 hour or until juices are clear.

Granny and I shared a love for cookbooks.  We both have admitted to being able to just sit and read cookbooks for hours.  I would call Granny every Friday, and I’d say that 9 times out of 10 we’d talk recipes.  She always wanted to know the latest new thing I had tried, and usually wanted me to either send her the recipe or try and make it for her the next time I’d be in Crossett.  So, I thought I would start a special category for “Paula’s Recipe of the Month.”   There is also going to be a general “recipes” category for anyone else who would like to share a good recipe.

If we get enough good recipes on here, who knows…Martha and I might just do another Martin Family Cookbook.  :)

The last two recipes that Granny and I talked about were for Brown Sugar Meatloaf and The Chewy (the best chocolate chip cookie recipe ever!)   The recipe of the month for May will be for the meatloaf, but you guys are going to have to wait until June for the cookie recipe.  :)

I couldn’t begin The Martin Box without a tribute to Granny.   After all, with her there wouldn’t be all of us.  We couldn’t have asked for a better Granny.   We were, are and will always be blessed to have had her in our lives.  We love you Granny!
